EB: So why do you use kosher salt? You're not Jewish, are you?
JH: Oh, heck no. Kosher salt is just large-grain salt that doesn't have iodine in it.

EB: So regular salt has iodine in it?
JH: Pretty much all normal table salt is iodized, yes.
EB: Why?

JH: It's really the only source of iodine in most people's diets, and iodine deficiency causes kids to be born mentally handicapped.
EB: And you don't worry that by using kosher salt...
JH: We don't think about that.
